for Seafood Gumbo

shrimp
- 2 large
onions
- 1 lbs.
smoked sausage
- 1 lbs.
hot sausage
- 2 large
bell peppers
- 2 lbs.
crabmeat
- 1 stalk
celery
- 1 lbs.
oysters
- 6 cloves
garlic (minced)
- 2 lbs.
chicken/turkey parts
(necks, wings, breast or carcass)
- bunches
green onions
- Parsley
(to taste)
- 3 tbs.
Gumbo file or 1 lb. Okra
- red
pepper/hot sauce(to taste)
- Seasonings
- 2 tbs.
Paprika
- 2 tbs.
Salt
- 1 tbs.
Cayenne pepper
- 1 tbs.
Black pepper
- 1 tbs.
Dried oregano
- 1 tbs.
Dried thyme
- 2 bay
leaves, crumbled
The first step is to prepare all the ingredients so they are readily
available for when you need them. I usually put the vegetables in
a small bowl once chopped. Keep the bell pepper, onions and celery
together in the same bowl. Keep the green onions and the okra in separate
bowls by themselves as well. The shrimp should be peeled before the
cooking process begins or if there is someone to help,while you prepare
the roux.
